Jo Kaucher�s path in the culinary arts took a left at the fork in the road when she found herself questioning why a vegetarian would want to work in a field so dependent on meat. So she answered that question with action. Joining forces with her now husband Mickey Hornick, together they gave birth to The Chicago Diner in 1983.
With her incredible talent, she took some of the classic recipes and replaced the meat, white sugar and such with wholesome, meatless ingredients, resulting in the popularity of the all vegetarian diner. In1984, Jo�s abilities and creativity earned her a silver medal at The International Culinary Olympics, where she competed with the first all vegan culinary team. Jo has since developed countless amazing dishes that have served as the foundation of The Chicago Diner and The Chicago Diner vegan bakery. She is recognized as a leader in the field of vegetarian cooking. A published author, she shares some of her secrets to cooking vegetarian, and continues as an inspiration to upcoming chefs and food lovers alike.
